That's right! I'm cooking vegetarian! Jaimie would be proud. This is my first time cooking ANYTHING with curry, and it actually turned out really well. The recipe was got from here, and is as follows:
Stir in coconut milk. Serve with boiled rice.
My biggest tip here would be to not be afraid to overseason, as the coconut milk at the end really mellows the whole dish. Go crazy!
Also, I keep buying "wow, that was great, but what the hell do I do with it now?" foods like coconut milk and parsley. Suggestions?
